A three-night pop-up restaurant at the top of the Emirates Spinnaker Tower to 60 covers. Designing a menu using Hampshire’s finest ingredients that could be served at the top of the Tower to a 60 cover purpose-built restaurant that would need to be built and dismantled each day, before and after service, ready for the for the Tower’s tourism clients the next day.

During my time as General Manager, Steph Moon and her assistant chef came to the Emirates Spinnaker Tower for three consecutive seasons and we worked together on these events.
Steph coped well with the challenges of logistics, particularly as our main kitchen is on the ground floor with the pop-up restaurant on the ‘viewing deck’ over 1 minute’s journey up in the lift!
Each event sold out to a packed restaurant of expectant guests, due to her driving the event on social media and press events prior to the opening. As a result, we had guests coming back year on year.
Steph worked well and integrated professionally with our Head Chef and his team; not easy considering that Steph was prepping for a fine dining gourmet event during the busy café lunchtime service.
The stunning views of the Isle of Wight and the Solent plus the super service of the Emirates front-of-house worked well with Steph’s imaginative and well-received menu.
Steph took our Hampshire food and really showed it off well.
I would highly recommend Steph for any such similar event; she is an exceptional chef to work with and has a positive and logical approach to overcoming considerable logistical challenges.

MC the AA Rosette Cookery Stage at the festival for two days and assist in the organisation of the programme. Help liaise with festival staff on the festival days and ensure smooth running of the theatre.

Valley Gardens, Harrogate

To develop and run the Long Table Dinner in Valley Gardens – an evening banquet for guests to enjoy outside all on one long table, as part of the successful Harrogate International Festivals summer season for two years (cancelled in 2020 due to Covid-19).

BRIEF
Together with two of the nation’s top chefs, we curated and hosted one of Rudding Park’s exclusive gourmet ‘Chefs’ Supper Club’ evenings, producing a locally-sourced four course menu in partnership with BBC Good Food, presented by Lexus.
Steph cooked the pudding course for this prestigious banquet, with Tommy Banks producing the starter and Tom Kerridge the main course.
The pudding, pictured below, is a play on Yorkshire Rhubarb and Custard, which was in season at the time of the event. Using rhubarb grown in the Rudding Park kitchen garden, and working with Head Chef, Matthew Wilkinson and his team, the various innovative ways of producing the rhubarb were showcased in this pudding and cocktail:

Steph’s thrill to learn about spices meant she quickly made herself part of our team and worked on a number of events: Bradford Cathedral Gala Dinner with Chef Oberoi and his team where Steph’s pre desert course was well received; teaching students at our World Curry Festival cookery school and being a chef demonstrator at the event.
